Interesting, so you went the opposite direction (highly customizable -> highly opinionated). We def still use Google Sheets internally at Coda for one-off analyses (financial models).

Disclosure: I work at Coda :). Main thing is conditionally showing selectable options based on what the user has selected in a previous step. Similar to Logic Jumps in Typeform but free :)
